If oil and water are put together, the oil will usually float on the water, that is, the oil and water will separate. Why is oil and water not separated? During the production process, the emulsification effect is formed by the use of oil-water mixing, heating, vacuum, homogenization and other functions. The blend of water and oil in is a whole, mainly with the help of surfactant, also known as emulsifier. They can change the surface energy at the interface of oil and water, which is also a process of solubilization: surfactants form micelles in aqueous solutions, which significantly increase the solubility of insoluble or slightly soluble organic substances, so that oil droplets are uniformly dispersed in water, or water is distributed in oil, which is often called emulsification. The first one (A) is to solubilize the solubilized substance in the hydrophobic core of the surfactant. The second type (B), the solubilized substance and surfactant form a fence structure similar to mixed micelle solubilization in surfactant.
