Processing method of mayonnaise by vacuum homogenizing emulsifying machine

1. With the help of R & D laboratories and analysts, mayonnaise vacuum homogenization emulsifying machine has better quality than traditional emulsifying machine. The device can perform the whole mayonnaise production process, including rapid preparation of premix, hydration of thickener and stabilizer, and preparation of final oil in water lotion.

2. The on-line mixer circulates water through the system.

3. Add egg yolk to the container. For egg powder, it will be quickly wetted and dispersed into the high-speed liquid flow.

4. Then, according to the batch size and powder characteristics, the remaining aqueous phase components are added to the container or through the powder feed hopper.

5. Fully mix, disperse and hydrate the ingredients through powerful mixer blades.

6. Add oil to the mixture in a controlled and timely state, which is only sufficient to stabilize the solution per second.

7. The ingredients enter the working head of the mayonnaise vacuum homogenization emulsifying machine, where they are subjected to strong high shear force.

8. This disperses the oil fines into the aqueous phase and immediately forms a lotion. Add vinegar (and lemon juice) with oil.

9. As the viscosity increases, product recycling will continue to ensure uniform consistency.

10. After a short cycle, the mayonnaise manufacturing process is completed and the final product is unloaded.
